How CLOSE are we?

RECIPE OF THE WEEK-Collard Greens

I love collard greens. Growing up, we had greens every week. I always thought of greens as "po folks" food. Little did I know that collard greens have the highest nutrient index listed. This recipe sautes the greens instead of boiling them in water. Here's an adapted recipe:

1 bunch collard greens (enough for two people)
1 tsp nutmeg
2-3 tbsps olive oil (try flavored)
1 garlic clove minced

Salt to taste

Cook the garlic in the olive oil. Add the collard greens, salt, and nutmeg. Cook on high heat for 15 minutes. Add water, if necessary, to cover greens. Continue cooking on medium heat for 30 minutes. The greens will be a deep, rich green color and tender to the bite.
